I thought the conversion kits also retarded the timing along with changing the flow to allow more fuel to flow in.

Common misconception. They use different corn completely. You eat sweet corn, this is corn that is grown to be used to feed livestock and such. The ethanol plant uses the corn, takes out of it what needs to be used and sells the byproduct back to the livestock owners to use as feed. What is driving up the cost of your cob is the price of fuel to transport the food.
