How do 31" mud tires look on a 2001 dodge ram SLT Laramie ?

I have that same truck in 2wd, 2001 Ram 1500 Laramie SLT. Only thing I want to do, as far as height is to level it. But regardless of if I lower the rear 2" or raise the front 2", my 255-70-16 tires look anemic. What are the largest tires I should be able to put on this critter without rubs and scrubs if I, say, lower the back 2'.

It really depends what you mean by 31" tires. Do you mean metric 245/75r16, 265/75r16 or standard 31x10.5r15? The first one measure just under 31" in diameter, the second closer to 32" but most people say "31" and of course, the last is 31".
245/75r16 came stock on a lot of Rams and is too small for most people. 265/75r16s came stock on some Rams and look great for stock suspension. Tire companies are making larger and beefier (technical term) tires for pickups so many sizes are actually growing. You can get larger looking 265s nowadays that really put to shame yesterday's "31" tires. Cooper's ST MAXX is listed as "32" diameter, Yokahama's Geolandar ATs is 31.9, and Toyo's Open Country MT is 31.8.
