Default Operating Temp?

Lets see...
when my truck gets to the operating temp. about 200 degrees on the gauge the truck will stall if it is not moving.
i.e. Stop sign, Stop light, someone turning, me needing to turn but have to wait because of traffic.
it starts right back up and idle like normal for about 15 seconds then dies again.
i have replaced the Cap, Rotor, IAC, and have Cleaned the TB
my question is it the Air Charged Temperature Sensor?

do the key thing to display codes. on - off - on - off - on.

since it starts right back up, it sounds like something sort of simple.
it sounds just like a bad IAC, but since you've replaced it with no change (?), then that rules it out.
i've heard or read that the IAC only does its thing when the throttle is not being pressed, as determined by the TPS. if there are no codes, i might throw one of those at it.
i have no experience with intake air temp sensor, IAT, so i don't know.
this is a question, could 02 sensor have any effect on i ?

i did the key thing and my uncle pat has a code reader and it showed no codes at all
it shows nothing.
at one time it did show a code for that
air charge temp sensor but i cleared that a while ago maybe 2 weeks
and i have just recently drove it long enough for it too warm up to 200 degrees
i only drive it too work 1.2 miles so it never gets to operating temp especially at 3:30 a.m.
when i go to work

A couple of the more off beat things to check: trans fluid/torque converter. Whereby the fluid gets worn out and loses its ability to operate the torque converter properly and you stall while stopping! Cheap test/fix is add a tube of Dr. Tranny friction modifier to the fluid. It's only about a 6-8oz tube so no fear of overfilling. Drive it a while and see if that helps. If yes, fluid change time!.
Another bizzar problem comes with the BOO (brake on off) switch. When you apply the brake it signals the PCM of the vehicle slowing and adjusts pulsewidth of fuel injectors. If you have a burned out brake light or any other continuity problem in the brake lighting circuit, or the switch itself, the PCM doesn't get the message and doesn't adjust the fuel injectors.
The TPS sensor could also be giving the same type of behavior if its faulty, however, it would probably also give you some grief on the way up too and not just stopping.

no brake problems, no lights out , no problems with fuses, checked all of them on the truck especially the ones under the hood
i unhooked all wires that could be unhooked and reconnected them after spraying them with a water evaporator stuff for electrical parts
then i reconnected them and reset the computer and it still does it.

i would take it to the shop but with me being the only one working and my wife in school fulltime i cant afford to do this.

boy am i glad work is close. all i need is a bike now... lol

Maybe also try and trace (scrutinize!) ALL your vacuum lines. Something perhaps connected to closed loop sensors since this seem only to happen at temperature. And as mentioned, the O2 sensor(s).

i had a problem that was mostly the same. i replaced all that, and there was no change. my next choice was to replace the MAP sensor, but i didn't want to spend $100 on anew one, and have it not fix the problem. long story short, i took it to the dealership, and they replaced the map sensor and it worked like new. but the downfall was the $100 in parts, and the $500 in labor. ha!
