Default Hurt....
Will it hurt to drive the truck with just the cat and not the rest of the exhaust on it? I dont have the 2nd O2 sensor on it either.Its only for about an hour drive.

No you should be fine. the 2nd O2 is only to make sure that the cat is working. If you drive with out the second O2 sensor you will propobably set off the cel but, that shouldn't affect perfomance.
