Try Ozium - the stuff works wonders. I've had the best results when I spray Ozium into the blower intake on the windshield wiper cowl - I set the blower to high, suck in the Ozium, then set the ventilation system to recirculate. Let it run like that for a while.

You could also get the Arm & Hammer carpet deodorizer and lay that down on the carpet. Let it sit for 15 minutes and vacuum it up. Follow that up with a good carpet shampooing followed by the Ozium procedure I describved above. That helped get rid of that nasty old tobacco smell that lingers in used vehicles sometimes.

Worst case scenario, you might have to steam clean the carpet or worse - replace it altogether. It could be that the previous owners never wiped their feet before getting in the truck and wore the manure into the carpet.

Good luck!

EDIT: Try having the heating coil cleaned, too. Or, better yet, try disassembling the vent ducts in the dash and clean them out. Pain in the butt, but it will be worth it if it takes out the smell.
