Something that would give driver and passenger a place to rest the guns while driving would be nice. We usually just set them with the muzzle on the floor and the stock angled up beside us-- it would be nice to not have them slide into the way and not have the muzzle wear from the dirt on the floor.
I don't know of anything off hand but I'd be interested in seeing what's out there...

It is placed over your head...just make sure it is secure and you don't hit the ceiling!

Big Sky Rack
I'm afraid I can't help you with the "over-the-seat" style gun rack. But I have installed one of the Big Sky overhead racks identical to the one TIMIDONE linked to at Cabelas:

I am VERY pleased with this style of rack. I've had it in my rig for 2 years now, and love it. I am 6'2" tall and have never had any problem with hitting my head on it, and neither have any of my passengers. I've included some photos showing where it has to be attached with the headliner pulled away, as well as some pictures I took tonight of it in the truck with a rifle in the forward rack.
One of the benefits of this style of rack is that the rifles are almost invisible from outside the truck (with the doors closed) unless you know that they are there and are looking for them.
The four screws that attach the feet on either side have proven to be bombproof over time. I even had one of the neighbor kids jump up and grab it while I wasn't looking and hang from it like a monkey-bar, and the little snot probably weighed over 100lbs. There have been no squeeks or rattles thus far.
As I said, I really like it. I have owned and installed a number of the older style solid Big Sky racks in my previous vehicles (the kind meant for double wall roofs like 70's and 80's Chevys), and I was a bit leary of this style, mainly because of how they have to be mounted and the modular nature of the rack. But there have been zero problems so far, and I don't expect any.
