Wonky oil pressure

Default Wonky oil pressure

I had to replace my oil pressure sensor (pain in the ***) the other day because the old one went out on me, it would bounce around and usually read zero. After about a week of the new one being out in it will now read about 30 to 35 at idle and 40 when I am driving, however wehn I rev the truck up high like when I am sowing off the exhaust sound to wake people up at night or when flooring it to pass it will jump up to about 60 and sit there for a bit then slowly go down to 40 again. Is this normal?

I recently did a full tune up, but I used a K&N oil filter when I usually prefer pure one because I dont really like the "high flow deal" and pure one I heard from many guys that know more than me is a better filter.
