You might get the tire to ware a little bit better on a 10" wheel. You'll need a wheel with more backspacing thogh if you get the 10" wheel and that might play games with your ball joints.
On the 8" wide wheel you'll be able to air your tires down more without worrying about them coming off the bead.
On the other hand if you ever decide to get wider tires you could run 14.5 wide tires on the 10" wheel so either way...

12.5" wide tires are just fine on 8" wide wheels, people do it all the time. Sure, its different looking than on a 10" wide wheel, but it still looks fine. I have 12" wide tires on stock off road wheels (17x8) and they look fine to me.
As far as the Timberlines go, I have no experience with them, but they look like a decent tread pattern for an all terrain.

On tires... worth mentioning, I have the pro-comp xtreme at's and have never been stuck because of them. they are awesome in shallow mud, snow & sand. wear well (have 95k on mine and still not down to the wear bars, and I bought them used at 2 weeks old) and have never had any balancing issues with them.
