I do not have any of the tools to do a compression or leakdown test... I will probley need to rent one or take it to a shop.

I'll proboly just do a mild overhaul and replace all the seals/gaskets/plenum, time chain, thermo 180 degree, valves/valve springs (maybe new heads the breath a little better than stock?), pushrods, cam (something that will give the truck more low end torque and some seriour "lope"), main bearings, cam bearings, oil pump, piston rings.... anything else I should replace? Water pump and alt. are brand new

Take your bare block to a machine shop to have it checked out. Cylinder taper, out of round, that kind of thing. If you don't have to bore it, have them hone it out for you. (not to mention, they can get it clean enough to eat off of....)
