Is there a way I can check the temp of the coolant to see if it's actually running hot?

After work I took the radiator cap off and cranked it up and let run. The thermostat didn't open till the gauge got to the last 0 on the 200 then barely dropped to between the 2 zero's.

I just noticed as soon as I cut the truck off at the gas station the gauge reads about 10 degrees cooler. I mean like the second I shut the truck off.

The dash gauge isn't exactly known for its precision.

Pick up one of the Infra-Red thermometers. (the little gun feller you point and shoot.) See what the temp is at the base of your thermostat housing.

Most any parts store should sell them, or, places that sell tools. Hardware stores maybe, lowes, home depot, or, online...... Jegs, Summit, Harbor Freight.
