Idles poorly when moving from fast idle to normal idle after cold start

I have a 99 ram 1500 4x4, with the 5.9l.
This ONLY happens after it has been sitting for a while and the engine is completely cold, ie, after sitting overnight.
Start it up, runs fine for a few minutes, but once its warmed up, and the engine starts to idle down off fast idle it starts to sputter and the engine shakes....Eventually once it settles at normal idle the sputtering and shaking goes away.
When the engine is warm this problem never happens.
Recently had the cat and post cat O2 sensor replaced, also had the plenum replaced.
Any ideas?
