Is a wheel bearing easy to replace?

Depends on the rotors. I've only replaced mine once and they came bearing-free. And the chisel would be for removal.
I keep my eyes open on Rockauto, every few months they'll have rotors on clearance at a huge discount. Mine had a real tendency to warp before I replaced the ceramic pads the PO had put on with stock semi-metallic.

I have a 2001 2wd and need the drivers front replaced. When I replaced the rotors & pads I thought where the heck is the bearing behind the castle nut??? Holy smokes its the hub that needs replacing. So looking for a hub and probably will need a air impact hammer or does the hub come off with just removing the 185 ft Ilb tightened nut. Man I am one payment left on my truck note and it's crying out for everything...geez
