I figure that since you're running around without oxygen sensors, you've probably also got a compromised evac system, too, and probably pulled water into the fuel system that way.

If you encounter the fool who disconnected your oxygen sensors, whap him up side his hillbilly head with a shovel. That sort of fool should never be allowed anywhere near a motor vehicle except to get into the prison bus.

also check your transmission for water. they are not waterproof. there's a vent up in the top of the bell housing.

if you have water, change the pan fluid and flush the lines, cooler, torque converter and valve body asap, or it'll cost you a transmission.

popping noise sounds like firing out of time, caused by cam position sensor, crank sensor, or shorted out wiring harness. you may need to just give it time to dry out while you change fluid in transmission, tcase, front and rear diff.

what are your codes?

How do you accidentally submerge your truck up to the plugs? Haha but anyways I'd do like all these guys are saying change all the fluids and spray the spark plug wires, coil, and distributor with wd40 you might just have water in the coil or crappy insulation on some of your wires
