Towing must be done out of O/D really important with the size of load you are towing, get used to it. Time for a comp test, these heads like to crack between the valve seats.

Edit; The death flash (pcm down tune from ma Mopar) is not helping one bit, look at getting a tuner of some flavor to get rid of it.

Min is 100psi as per the fsm, Me I like to see 140-165 psi per jug. Start with number 8 cyld as that's the jug that likes to go south.

Yep fun eh! About 15hrs work to change out both heads. If they are bad don't get a reman head look at Odessa or Cific heads.

150 is good. As long as they are all withinh ~10 psi of each other they are alright.

Leave OD off. Max torque is at about 3400 RPM anyway

fwiw, i towed a jeep GC, last year with a tired 5.2(318) and maintained 65-70 no problem. o/d was off too.

total weight was a little over 7k.

3000 rpm sounds kind of high for 55 mph. Were the 4:10's original or changed out at some point?

Someone else running 4:10's may post up what their rpm range is. Are you sure you are getting all gears in trans?
