Engine too Cold - Code 1281

I'm back to confirm what you all already knew - it was the thermostat. The old t-stat (and by old, I mean 2 weeks), had failed and was stuck wide open when I removed it. Dropped in the new Stant superstat 195 and now I'm averaging 203F. Thanks, everyone!
I have a question.. Mine runs the same way! 4 new thermostats, and it never changes.. No big deal, I've got the code a million times, However, I let it sit for a month, driving the gas saver, and now? Truck will NOT start. Its throwing this same code, Guages are going insane. Last time, This same code happened, it wouldnt start, until I plugged a reader into it, and then it started.. My ground was broke. This time, the ground is fine, and the pump is pumping gas (Confirmed with a tester on the rail) The motor tries and tries but NEVER catches, and my gas guage goes from empty, to half, to a quarter, to full, to empty.... etc.. My radio comes on, goes off.. My check guage light comes on, WHEN my guages stop working all together, and goes off when my guages read things they shouldnt (Like 2500 rpms while I am still just trying to start it.) What on EARTH is going on??
