The only things that can happen to a timing chain is it becomes loose or breaks. If it's broken it's not gonna start. If it's loose, your truck will be sluggish. If it's really loose and somehow skips a tooth or two, you should be able hear it bangin around in there.
I would be looking elsewhere for your rough running. Fuel pressure, good compression, good spark, faulty idle air control motor or tps, clogged cat and blown plenum gasket, solid charging system. Got any codes?
+1 i could almost guarantee its not the chain, it would still run with a loose chain. these engine are hard to kill. its prob a sensor causing it, and or a ground is loose.

5.9 is a 360, but anyway, by wont stay running, you mean it won't continue idling?
Disconnect the neg. battery cable and remove the throttle body. Remove the IAC and clean it and the well it fits into. Don't mess with the pintle on the IAC, just clean it.
While the throttle body is off, look in the plenum to check for pooling oil, an indication of a leaking plenum gasket.
Put it back together, connecting batt. last.
