Default Oil consumption, Sluggish, Poor MPG

Alright well maybe I am over thinking this all but it can't to have a couple extra opinions on this. So after just a random oil level check I find out that I'm way below the add line on the dipstick. This concerns me, because I just did an oil change just over 2000 miles ago and I know I filled it to the top of the safe line. I knew she burned a little, but not this much.

Now what boggles my mind is what can be causing this, I'm only at 117k miles, brand new plugs, plenum is fixed, front 02 sensor has been replaced, and the cat has 7000 miles on it, I don't know whats going on here. But I'm led to think my cat is not any good.

Just to add to this I know it can't help out too much, but I do have some serious vacuum leaks, where of which I don't know. i don't have the patients to deal with that although I'd like to fix it. I know that I have what some of you may call "wacky vents". There is also a serious sucking sound coming from the engine when I first start her up and shes cold, but goes away as shes gets to just about normal operating temperature.

A while back I did some muddin with the truck, long story short, as I'm leaving I guess I hit a big puddle, and she would barely stay alive with the foot almost to the floor, the cat was glowing red. Didn't drive it home that night, but with a new set of wires, she ran like new.

Now before all that happened and the cat was still new, I would get a rotten egg smell coming from the cat every once in a while after hitting roughly 2500 rpms while accelerating, which would lead me to think my cat is no good.

Recently I've been doing a lot of highway back and forth to school 50 miles each way once a week, I was running the SCT 93 octane tune from hemifever, calculated my MPG to be 12.1... on the highway, now I know its a truck and all on stock 3.55 gearing with 33.5 inch tall tires but that seems a little low. I didn't really think I was going to hard on her either.

This week I de-tuned it down to 87 and am trying this out and will come back with results.
But with both tunes I noticed very little power, especially in overdrive. Accelerating in overdrive my truck just falls flat on its face. Now I know there are some decent tread on there, but I'm the only one in the vehicle, I weigh 170lbs, and I have a backpack in the passenger seat and nothing at all in the bed. The acceleration in overdrive is just terrible.

Any thoughts or opinions on what could be the cause? I think I'm going to pull the front 02 sensor and test out the cat and see how far that gets me just to be sure. As well as check #6 and #8 sparkplug. I just ordered a new PCV valve and think that may solve my oil consumption dilemma, but not too heavy on my power and torque (although I hope). I have recently cleaned my IAC, and am now thinking of replacing my MAP sensor as well as my TPS. Thank you.

Recheck the plenum, if that's looks good, do a compression test.

I'll take a look at the plenum and come back with results, as a compression test I cannot do for several days.
