Yea I checked belt first thing I was thinking the same thing. But it was good. I just don't see a vehicle being able to over heat in 5 mins with no ac on and radiator fluid is full and looks good

Have you verified it's actually getting that hot and not just a gauge malfunction? That's awful quick. I drove over five minutes before with no pump, engine already quite warm. Is it possible to have the wrong pump? It usually takes longer than five minutes for the thermostat to open.

All you're doing is swapping parts. That is not an effective way to troubleshoot the issue.

First, remove the thermostat and place it in a pan of boiling water to see if it opens, and whether it opens very slowly or opens appropriately.

Second, there should be a procedure in the Field Service Manual for testing the coolant sensor with a meter.

Get the proper workshop manuals first and then break down the steps rather than spending money in a foolish fashion.

No it does not. It should start all the way to the cold side and move up as the engine warms. If you unplug the sensor the gauge should fall to cold. If it doesn't then you might have a short somewhere.
Another thing to watch for with new sensors... They can be bad/off from the factory. I went through 3 before I got one that would read in the proper range, and it still shows about 15 degrees above true temp..
