98 dodge ram 5.2 temp shows overheat immediately

Question

I bought my 98 5.2 4x2 about 6 months ago and I just did a head up rebuild (new thicker heads and all new gaskets) and still having a few problems...

1.)
running temp stays about 190-215. And every once in a while... (3-4 times per day) it will slowly over about 10 seconds climb up to about 240 for about 20 seconds and slowly come back down to 215 the same way. Not sudden to imply temp sensor but slow implying air pocket in cooling system. radiator and over flow both full. I used a 160 t-stat (being changed to 180 or 195 soon but don't know which one.)

2.)
oil preasure bottoms out during idle. (no knocks or ticks) just drops to 0 and then tries to come back up and then drops again. over and over and over.
