How do I remove this high pressure fitting from my power steering pump without messing it up?

You need to unscrew the fitting at the pump, that is a swaged union, and taking it apart will destroy it.

If you are concerned about that crimped fitting, its just cheaper to remove the entire hose and replace it. That fitting can be cut off with a wiz wheel (Dremel tool) and replacements can be obtained at hydraulic line and A/C line repair shops, but typically that's only practical for expensive hose assemblies.
