Default oil gauge

ive had this problem since i bought the truck back in 2016 and the problem stayed when i did a engine swap with a new rebuilt 318 in 2017 ( the truck came stock with 318)
Any time once the truck is at running temp the oil gauge drops to zero when stopped even though the truck is full with oil and no ticking or knocking sound and a check gauges light comes on and makes that annoying gong sound and ive tried replacing the pcv valve oil sending unit using thicker oil but nothing is working i did reuse the oil pump when i did the swap but it was clean and fine with nothing wrong with it same with the pick up tube and now im just tired of hearing that gong anytime i drive and need advice on what could cause this

Get a mechanical gauge and verify you are actually getting oil pressure.

That is way too low. You want a minimum of 10 PSI at idle, and then about 10 psi more per 1000 rpm. (and it should max around 60 or so.) If you are only seeing 15 to 20 PSI on acceleration, something is majorly wrong there. If you have any warranty left on that motor, I would be having a chat with whomever you got it from.

I'd repace your oil pump
