You should be fine with those Edelbrock heads that you've selected. Just take care in selecting the proper thickness head gasket, in addition to taking into account how well aluminum dissipates heat. You might want to contact Edelbrock directly for additional assistance.
Yeah we used to deck heads on our model engines in Machine Shop to increase compression so if you can find head gaskets of varying thicknesses you can adjust with that. Even a few thou can make a significant difference.....?
What compression ratio do you have currently? I run 11:1 and with aluminum heads and 91 octane pump fuel I can still run a turbo or blower if i want. Tuning is key. You're overthinking it

No lowering compression just lets you put a few more pounds in it, really. If you have no way of tuning it, it’s extra knock resistance. But if you can boost reference the fuel system and retard timing based on boost level you’re fine. Aluminum heads are also much safer than iron if you have any respectable compression. If you had iron, yeah some larger chambers would be a really good idea.
The trick is, make sure you are getting enough fuel for the additional air, and you aren't advancing ignition too far..... You can build some serious power with forced induction.
