Default 408 Stroker tuning

Hello, New to this forum. I am just looking for some direction in options. I have a 99 Dodge Ram that I replaced everything. Everything except for the body. anything that turned or moved has been replaced.
So part of my build I went with a 408 stroker along with stronger planetary gear setup with 2800 stall. I am just trying to get it tuned correctly. I have a T&C with 3.6 vvt that pulls harder than my truck along with a 300 with a hemi in it that puts you in your seat. This truck doesn't feel much better than the 96 ram I had with 5.9 magnum and mopar performance computer. Kind of at wits end. It pulls hard low then around 3000 to 4800 feels stagnate, then 4800 up to 6 to 6500 feels like a beast. can't figure out the mid range lag.
I am floating other possibilities. Stand alone system , possible carb swap. any recommendations would be greatly appreciated.
Here is what all has been done thus far :
BLOCK: 408 ci roller, 2-bolt main With ARP main studs
CRANKSHAFT: 4.000" Scat crankshaft
CONNECTING RODS: 6.123" Scat I beam
PISTONS: 9.75:1 SRP Forged
PISTON RINGS: Speed pro file fit
CAMSHAFT: Hydraulic roller, duration @ .050: 226 / 230, lift: .565"/.565" 110 LSA
TIMING CHAIN: 9 keyway adjustable billet double row
OIL PUMP: Precision Oil Pump
OIL PAN: 6 quart capacity
VIBRATION DAMPER: Powerbond
HEAD GASKETS: Felpro
HEAD FASTENERS: ARP head bolts
CYLINDER HEADS: New Magnum iron castings with Manganese bronze valve guides and 2.02" intake valves / 1.625" exhaust valves (These heads are level 1 ported)
ROCKER ARMS: 1.6 ratio roller
INTAKE MANIFOLD: Dual plane EFI airgap intake
THROTTLE BODY: F&B 58MM
MSD: Coil
TORQUE CONVERTER: 2800 Stall,
HEADERS leading to 3.0 exhaust. (dual exhaust)
FUEL: Stock new fuel pump.
INJECTORS: Holley 30 lb,
TRANSMISSION: 46RE upgraded 5 planet gear instead of 4 performance clutches (brand new),everything mechanically is new (Alt. / water pump / AC compressor etc.)
New detroit lockers, Axles, bearing, brakes. Again everything is new except physical body of truck which is in great shape.
Just can't figure out why it does not pull like a built rig should. I feel like NASCAR put a restrictor plate on my motor ..

Truck itself

408 stroker dropped in.

Was the timing set installed straight up? (stock?) Gotta get the tune dialed in. (yeah, got your email, and responded as well.) Could always invest in the HP tuners software, and tune it yourself as well. (STEEP learning curve...)

Damnnnnn that's pretty. That is exactly what I want to do to my 96 5.9 Magnum...

Your engine is pretty close to how mine is built also. My cam has a 108* lobe separation. I'm running 1.7 rockers so my lift is around .545

I had problems with the EQ heads I'd installed so I can't tell you yet what it's like for power.

I have a HPTuner MPVI2+ and Ryan from FRP is doing the tuning for me.
