Have replaced all those components but if 7 to 8 mpg sounds about normal for this truck then it is what it is.

Yes looking at it from the front. The lines are hooked up correctly and the check valve is already removed.

Tire size is 245/ 75R 16 as for the gear ratio one spin of the tire turns the driveshaft just under 2 times? like 1.8? doesn't sound right. I think it's a limited slip and maybe that has something to do with it not giving me the right ratio? Is there another way to tell without taking the rear axle cover off?

If you spin one tire, does the other side spin the same way? Or does it go the opposite direction?

Probably 3.55 gears.... those were pretty common.

There may be a metal tag on one of the bolts on the rear differential cover that has the gear ratio printed on it. It sounds like you've maintained stock sized tires and haven't installed taller tires on your truck, so your current gearing shouldn't be a factor unless you have gearing less than 3.55.

Found the tag on the axle it's is a 3.55. So you all think the truck won't have a problem pulling a 5,000 pound trailer up long steep hills?

Stay out of O/D while towing.
