Had to make 150 of these today for the grandson's graduation party,
I forgot how good they are! This, from what I gather reading the internet is pretty much an Ohio, Indiana, & PA, treat from the 60's that my son asks me to make still today.

Recipe makes 3 dozen give or take a few.

-----------------------------------------
2 lbs. cooked corned beef [chilled]
{Cook 3 lbs of brisket to net 2 lbs}

1 lb SAUERKRAUT [drained]

1 large onion chopped fine
& sautéed in butter

4 oz cream cheese

2 large eggs [slightly beaten]

2 tsp garlic powder

2 tbsp chopped parsley

1 tbsp Worcestershire Sauce

Chipotle Tabasco Sauce to taste
-----------------------------------

Egg/dip
[2 eggs & like amount of milk or cream slightly beaten]

2 cups of bread crumbs.


Grind corned beef in food processor to coarse pieces
about the size of large peas.

Mix in all other ingredients except last two.

If you refrigerate the mixture 1 hr it's easier to form the *****

Roll into 1-1/4” to 1-1/2” *****.

Roll in flour, then go back and re-roll in flour.

Dip in 50/50 egg/milk mixture and roll in breadcrumbs.

Deep fry @ 375° for 2-3 minutes till golden brown.

Serve with dipping sauce

Horseradish Sauce
1000 Island Dressing
Or a combo of both blended to taste

Can be made ahead and reheated in oven or microwave.
Freezes well.
