I want to get some black wheels and there's all kinds of offset and backspacing listed on the wheels. My truck is 2wd with 16s right now, what should I be looking at for wheel offset and backspacing? I don't want it to look any different than stock, and I don't want to have to do any trimming...
Our stock wheels are 16" x 8", with an offset of 25.44mm. So keep it the same offset to keep the stock stance.
Keep in mind that offset will change with wheel width. Thus, if one increased to a 16x9" wheel with the same 25mm offset, the inside lip of the wheel would be a half inch closer to the frame. One would want to do a +12mm offset to achieve the same backspacing.

True about the increased backspacing with the wider wheel, but even with a 9" wheel (with 25 offset), there aren't any clearance issues with our Dakotas. At least two members, (or 3 IIRC), are running 20" x 9" & 25 offset with no issues and a stock stance. The 12 offset will push the tire out a bit, not a lot though.

So, I get those wheels and slap some 265/65-17's on there, there shouldn't be any rubbing?

I agree. I wasn't doubting the fitment on our trucks, just saying that the offset does not equal the same backspacing on a different wheel with a different width. My factory steel 16x7s have a +25mm offset, resulting in a 5" backspacing. My 285s rub the frame at full lock. But then again, I'm running 285s on factory wheels....
