In an 8 inch wide you will want 25, 9 inch you want around 13 to 30 depending on how much you want to stick out. As stated already, -12 is too much... 0 is pushing it, and 13 sticks out a little on a 9 inch.
If you're set on the dick cepek dc2, you wont get any higher than -12 in 17 inch. 18 has a 0 but still it sticks out quite a deal more than stock.. my rim in my Sig is the other dick cepek offering for higher offsets, its a +13 and they have it in a +6 in 8.5 17" which sticks out just like mine, bout 3/4 an inch. For stock look you should choose another rim with a 25 to 15 in 8 to 9 inch width respectively. Good luck in your search!
For a stance like stock, you need:
With an 8" width wheel, offset of 25 is perfect.
With an 9" width wheel, offset of 18 is perfect, but will be pushed out a little further due to the increased width of the wheel.
If you want the stock look, stick to the 8" wheel with 25 (or close) offset.
Here is a 20"x9" wheel with offset of 19, it is pushed out a bit.

That wheel will be an inch further out than the stock wheel. Not too bad, but if you use the 265/70R17 you will need to do inner fender and mudflap trimming as I stated in the other thread. Look into a leveling kit too while you're at it, it will cut down the amount you will need to trim with that 'almost' 32 inch tire. If you're around 40k miles or more and are still running stock front struts, you may want to change those out while you're installing the leveling kit. Or no leveling kit and a bunch of trimming
With the Dakotas, it seems like Dodge put the biggest tire they could and then built the wheel wells around it, which means any deviation from stock size requires modification.
Me personally, I kept the stock diameter with the tires you see in my pic below, all I did was add a bit under an inch to my wheel width and a slightly wider tread and I had to trim just the front inner part of my mudflap. Keep in mind though, the rear will take a lot more so don't worry about that. It's just the turning clearance of the front tires that is demanding.
