Newbie here.

Just bought a 2011 Dakota (red) and I would like to install HIDs in it. What kits have you folks used and would you recommend them? Also, is it ok to use the stock housing?

I havent had one in my Dakota yet,

But in my first car i went with Xenonsupply.com, and they're a little pricey but its top quality.

DDM Tuning is a good one, and they honor their Lifetime Warranties.

However, do a retrofit or somehow get projectors in there. With stock housings and HIDs, you're going to blind people, hence why its illegal in most states.
