tb sounds worth it. I also considered switching to the 2008+ year intake manifold, any thoughts on that?
lose low end, gain top end..make 20 hp to the rears though..more of something you see on the dyno sheet than you feel from the petal I bet. I would have done it but the adapter plates for the throttle body are as costly as the manifold itself making it a $500 + mod..YIKES
Whats the best E-fan out there? I know how much load it will take off of my engine, but will it have the same cooling power?
HHR fan is what most run (myself included) and yes, it will have the same cooling power. Do a search for efan on here and read up a little. There are tons of threads on the subject.

mine overheats sometimes but rarely. It is usually on very hot days but sometimes even when its in the 80's. It usually happen when I get off the highway and then am sitting in traffic/idling again or if I drive it, come home and go back out again. It bothers me but the other 90% of the time it sits way below the halfway point. I have my fan controller set to turn on at the lowest temperature. I guess possible solutions to my problem could be getting one of those H.O. water pumps or building a fan shroud for my HHR fan to direct the air to the engine and not let any get wasted throughout the compartment or even through the grill
My temp needle will sometimes go above half when its hot and a shut the truck off then turn it back on a few minutes later, sound normal? Also, is there a mpg gain with the efan?

Perfectly normal. When you turn the vehicle off, the coolant can no longer flow and the heat is not removed by the radiator so it sits there and soaks up heat. When you turn it back on, coolant starts flowing through the radiator again and the system starts cooling again. Thus a spike in temps when you turn it off and back on again. You might see 1-2 mpg with the efan.
