to make the meat a higher quality, and better tasting, you need to bleed the fish out. fish dont urinate so they excrete it through their blood stream and out of their muscles. so that fishy smell you smell with comercial store bought crap is what the amonia does to their meat. usually i just break a couple gills, and that leaves their heart beating, pumping all the blood out of their gills. it turns the tuna into really great sashimi.

Force is a pretty high strung guy too. I was was waiting for my co-worker to the take the picture and Force said "we don't need him...just give me your camera" and Force took the pic himself.
