No Power below 1500-2000rpm ?!!!

Hey guys, I'm new to this forum and hoping that you can get me on the right track to fixing my problem, so here it goes. I've got a '02 1500 with the 4.7, manual transmission, a K&N FIPK and about 91k miles. Tonight I hopped in the truck and when I went to accelerate up the little hill by my house I barely got anywhere. No idiot lights came on, engine sounded really weak but didn't sound like it was going to die. Sounded kind of like trying to go up a hill at 25mph in 5th gear. Concerned, I played around with it a little and once I got it towards 2000 on the tach I got a lot more power, then I shifted into 2nd and had the exact same problem. Any ideas?
I just took it on a trip of about ~800 miles and it did fine, I didn't notice anything unusual. Changed the plugs about a 1000 miles ago, replaced with the stock champions. I can rev the engine just fine, but when I get into gear, I don't go anywhere fast. Beforehand, there's been a little delay before the engine picks up, I expect my current situation is that on steroids. The truck is parked on a healthy inclinde too, if that could possibly have anything to do with it. I'm hoping its some sort of sensor, I really don't want a trip to the shop. Thanks.

if it is not to much of a project just drop the exhast after the cats,if the problem goes away its the muffler,if it doesn't then you have to drop the exhaust at the manflods,if it runs better than its the cats,i would wait to see what other people say first,thier are alot of people with alot of infor on this forum who mite know of something else thatis alot easier to figure out the problem
