The stock fan does not run all the time... Once you get to 40 mph or so, it freewheels, reducing drag on the engine. The electric fan comes on only when the controller tells it to. I set mine to come on at roughly the previous "normal" temp (I also put in a 180 t-stat). The new "normal" is just over 1/4 on the gauge (was just under 1/2).
The stock fan dosnt ever completely free wheel and its around 50 that it unlocks. When its really really cold out there on all the time do to the fluid in them being so thick. It kills winter gas milage big time. Mine dropped over 2mpg since it got below freezing here in Mi.

Why did you go to a 180 stat??? Did you put a chip in the truck or something???

No, no chip. The original 'stat was beginning to stick closed. I put in the 180 I just wanted him to run cooler. Too much heat is not a good thing. Yes, really cold can cause the silicone in the fan clutch to always havea grip. The thermostat in the fan could easily have a wide variation. I've heard of some where the silicone completely goes away and the fan never hooks up to the clutch, causing over-heating at low speeds.
