Headers
Yea, it's not hard. Really easy to get to everything. I didn't even jack it up (although if your truck is not lifted you may find you need to). If you take the wheel well covers off up front, you'll find it a lot easier. You can get to all the top bolts from the wheel wells and the bottom ones from underneath.
I thought I read on the pacesetter site at one time that their long tubes aren't 50 state legal. Not that it matters, I'm in Canada and you don't seem to be able to get long tubes for a 4.7 from anywone.
My brother in law and I did my headers. Here's the link...

As far as the question about shorty's, they do have decent gains on some vehicles, but I've seen the dyno's on a Hemi, and it's next to nothing, you could get the same gains with just an average aftermarket cat-back exhaust. I'm told it's because the Hemi stock setup breathes fairly well already, it's imperative for the Hemi heads to have better than average intake/exhaust to start with. Mid's are somewhat better but much less than half the HP gains you'll see with Long Tubes.
I've got the Pacesetter's. I've seen the dyno's on all of them. The Dynatechs have the best gains, but the Pacesetter's are not far behind and you could almost get three sets for the price of the Dynatechs. I bought mine stainless and had a local coatings shop do the ceramic coat inside and out. A much better job than factory, but if you are going to get factory, get the "Jet Hot" coated ones. They are ceramic coated on BOTH the inside and outside.

Here's a couple shots of mine before I put the wheel well liners back on:
