I prefill the filter and it is still a little above the mark before I run it.

Quickoildrainvalve to the rescue! TWO INCHES above max?? One extra quart should only raise it about 3/4". I prefill the filter and then put five quarts in and check it. Invariably, it wants another quart and a half to the "max" line.

I mean I understand that some oil stays on the internals of the engine but enough to put me a a couple inches above the full line???

Am I missing something?

If it's really over filled what are the possible things that could do? (I haven't started it yet)
I wouldnt put it past a Flyers Fan to screw up an oil change.

JK!

If it calls for 7 quarts, and the oil filter is the right size, you shouldnt have anything to worry about. If the vehicle is not level, the read can be off on the stick. I wouldnt add less oil then the book calls for, id think the stick would read wrong before I would consider not putting the 7 quarts the engine calls for just to see it look right on the stick.
