Running the heater and having it cool back down is normal. Shows you are right on the edge of seriouly over heating. From what you have stated, my guess would be restricted flow. Which comes to basically the thermostat or radiator.

You guys know what I always say about 4.7s and overheating issues, warped/cracked heads and bad head gaskets

May want to check fan clutch, I have a 05 and have had to replace it twice

you should have got an electric fan put on instead.
