Wellflow, first welcome and consider joining the 03 Forgotten Club. The link is in my signature. You mentioned thermostat. Did you replace it or test it it? When you run the heater, does it blow hot? Are you running a stock clutch fan? What do you think is the problem? Is your radiator coolant contaminated? Have you checked your engine oil? Does it look clean and does not look contaminated? From a cold start, can you watch the temp go up and see a dip when the themorstate opens? I am just throwing out ideas I look for to determine if everything is normal or not. Basically comes down to coolant flow. Stat, radiator and pump. Good luck...

Water pump problems are usually limited to a bad seal, leading to a bad bearing which causes the lost of coolant which leads to overheating.
Are you losing coolant? Bad water pumps are usually not really a pumping problem. Think about the questions I asked previously. If it is slow to overheat I am starting to think maybe some folks are having a clutch fan problems in traffic. This can be checked by running at highway speeds and having the temperature return to normal. Radiator caps can also be a source of losing coolant. Hang in there..

Did you say your AC pump was iced up and you were not using it?

Sorry -- you're thinking it's the water pump, but have to ask where the water pump is? Hmmmm. It's on the front of the engine, right behind the fan.

FWIW, yep, the pump is fairly easy to replace. Be careful with the coolant - critters like it and it's poison.

Anyway, if you grip the fan blades, can you wiggle the fan side to side or up and down?

Your iced-up A/C compressor is a different problem. That's often a result of not enough refrigerant or insufficient air flow over the inside coils, but work them one at a time. The over-heating is more important.

Does it run hot in stop and go traffic? Run hot on highway? Mine ran hot in town but was fine on highway. Fan clutch was bad check to see how easy yours turn by hand. If it turns easy by hand do the newspaper trick roll it up tight and start the truck and stick the ens on the fan clutch housing be careful of the blades. Mine stopped when I added pressure.
