Ok I'll give it a shot.. Scientists and engineers that are paid way more than us came up with the stoich... Basically yes the perfect burn ratio is 14.7 pounds of air to 1 pound of fuel.. The ECM along with all the sensors- O2, IAT, map, maf etc... Will measure the amount of air and the amount of unburnt fuel in the exhaust to constantly try to even with the 14.7.1-1 ratio.
Now when u say get the 12 psi from the meter the computer is automatically changing the amount fuel that the injectors are shooting into the cyclinder. Hence why if u put a turbo or supercharger on- u need a computer or new fuel maps to keep the ratio as close to 14.7.1/1.
Now the 14.7 atmospheric pressure reading comes from a column of air 1 sq inch from sea level that reaches out to the I think the ozone layar. Now the weight of that air in that coloumn is 14.7 psi... So that's why the stoich works causes it's easy
easier to change the fuel trim instead of air pressure ...especially a naturally aspirated engine.. Hopefully this makes sense? Oh and sorry for any spelling mistakes I'm nMy cell phone right now

And this is one of the Main reasons why electronic fuel injection is better then carburators.. Better burn.. Better power .. Better emissions...

another thing i noticed is that when i floor it, and let off the throttle, the reading goes to like 18 for just a second. is that o.k.? and why is it doing that?

yea thats fine.... when your at high rpm to lower the RPM back down it quickley it basically kills the fuel. then i believe something like the inertia or weight from the pistons keep it running until it gets to idle or your get back on the gas pedel!

so thats saying its almost all air, and a small amount of fuel to bring the RPM down smoothly
