Backpressure
A member on here did dyno runs with and without a cut-out. He lost 3hp using the cut-out.
Running lengths of pipe out the back will increase pressure over just a cut-out after the cats.
You'll be fine. Prob couldn't notice a difference even if there was any.

I gained hp/tq with the cutout open, and lost some with it closed, but my times were slower with it open and faster when it was closed. I got the dyno sheets somewhere around here so I'll have to go see if I can find them but it was around a 10rwhp/tq increase with the cutout open vs closed.
If you are going true duals with just the cats you should be fine as long as you stick with a 2.5" pipe and dont go any bigger.
