Auto to manual conversion
you would probly spend as much if not more money doing this "conversion" than you would lose if you simply traded your truck in on a standard considering that you have to change all kinds of stuff; the wiring harness and computer, the tranny and pedals and a whole mess of other little stuff.
I'm with Vipers on this one. If you're convinced you need a manual you probably won't loose much or anything trading by the time you're done, especially if you can find a good used truck. I think a full motor swap would be easier than that tranny swap...like he says, pedals, sensors, computer, mounting brackets, shifter, etc., you're going to have to be VERY good just to get it working, let alone the cost.
Having said that, if you decide to, let us know...should be fun keeping up with how you do.

Unfortunately Dodge does not offer the 1500 with a Hemi & manual transmission. That was my first choice in trucks 1500, regular cab, short bed Hemi – stickshift. The closest you can get is getting a regular cab - Long bed 2500 with a Hemi and Stickshift. (or I guess a quad cab short bed)
Plus, according to the information at Allpar.com, the New Venture 3500 transmission in the Ram 1500 would not hold up to a Hemi anyway. Your best bet then is to get a manual Ram, upgrade the engine AND transmission….and add in your frustration factor and costs - you would be better served to just go an get a used SRT 10.
