I currently have an '03 Laramie 1500 with separate driver/passenger ac/heat controls.

I just bought an '05 SLT 1500 with just the main control. My question is, since it's the same size, can I swap the 2 controllers out?

Put the Laramie on in the SLT and vice versa? Probably not...but just wondering.

You can swap the controls, but it won't work. In order to fully make the change requires removal of the entire dash and the HVAC housing. This also means having to drain the coolant and discharge the AC. Then you'd have to put in a completely different HVAC Housing, put everything back, refill the coolant and recharge the AC. Not worth it in my opinion.
