Default Truck losses power after 60mph

My truck has plenty of torque when driving and taking off but seems sluggish when going past i have to keep stepping down on the gas to get full acceleration to drive faster. No check engine lights are on shifts just fine so i did a spark plug tune up and it made a small difference but i think my catalytic converter could be the issue could i just cut it off would that affect the sensor? I need help.

Pull the front O2 sensor out of the exhaust. (yes, physically remove it.) Go for a drive. Any better? If it is, then yeah, the cat is clogging up.
