Just wanted to post an update. I have replaced the crank position sensor and it seems to have resolved the issue. I was able to idle the run/ drive it around the yard for 3 hours and it did not shut down on me. I was not able to get a Mopar sensor quickly so I did order this one from Amazon, but I would agree with HeyYou that I should have put a Mopar unit. It was a real pain getting that sensor swapped and I don't think I could have mentally handled it if I found out the off brand sensor didn't function properly after all that work.

If the issue comes back, I'll update this post.
