Default Thermostat swap

Hi guys,
dodge ram 1500 2005 5.7 30 000 miles,in French Polynesia,tropical hot weather.
I am planning to flush my cooling system.As I will have to remove the thermostat.I am wondering if I should replace it as it has 20 years.If yes,wich one should I choose and which temperature?Doing short trip only in hot temperatures.

Stock is 203°. If you aren't having overheat issues, stick with stock as you have a clutch fan that will keep it more thermally stable than a vehicle with an electric fan. If you want it to run a bit cooler I'd say don't go any lower than 190° unless you do alot of heavy towing. The main reason (besides emissions) the thermostats are higher since the 90's is so the oil gets hot enough to burn off condensation. In the more modern engines if the oil doesn't get hot enough to burn off the moisture it can sludge up inside your engine.
