Can anyone tell me why my AC smells?
I know what you're saying, especially since I know now that you are in the humidity capital of the world. I'm in awesome southern CA. Here we have little humidity and running just the fan works great.
Try switching the system to fresh air mode before shutting it down. If the vent doors in the A/C box stay in the position last left, then it will be able to air out, so to speak, while the vehicle sits. I was a mechanic with Toyota for years and this was a big issue with Camry's. We advised to do this and it worked. I have noticed that smell in my 05 Ram but only after the wife drives it for a while and leaves it on recirc. After parking the truck with everything left on fresh, no more smell. This is a simple, cost free fix. Try it before spending money. I live in Vegas so hopefully it works in your climate.

You definately need an antibacterial/mould killer specificly designed for AC's.
This kills off all the moulds etc, which produce that dank smell.
Then when it's all killed off, It would be an excellent idea to do as you say and air off so to speak, the AC.

Lysol works great to remove the smell inj your a/c just dont grab any real strong smelling varieties and you'll be fine. Also after that if you add some of the fabric febreeze and spray your seats and floor down and that will get rid of all those other smells too and make your truck smell like it just came out of the dryer. Thats my bi-weekly routine every summer and once a month routine in the winter here in Arizona.
Bacterial type cleaners will kill the science experiment. I have very good results with the Lysol brand however there may be other brands or products which work equally as well.
I turn on the engine, enable the AC with outside airflow. I open the windows and then spray a small quantity of the bacterial cleaner into the fresh air duct (ducting in front of the windshield wipers).
I do this a couple of times and then turn off the AC.
Part of my monthly PM routine and I do it to all of my vehicles.
About every two years, I will replace the foam sponge air cleaner on our cars, which also would help.
