Dual-VS-Single Exhaust?
I have them straight out the back, can't really tell you which is better, because it is one of the first things I did to my truck when I got it.. But there are a lot of people on here that have tried just about everything when it comes to their exhaust to see what works best from them... Hopefully someone will chime in on that one.. And who unloads from the back with the truck running? I don't see that as being a con to dual rear exits.. A simple cure would be to turn the key off, and just start it when you're done... I don't know, call me silly...
Hope you don't mind my two cents here....
I actually preferred a dual exhaust setup. I believe that it looks nicer, and in my circumstance - I did notice a reduction in backpressure. I also gained about 2 MPG (plus a real nice sound). The Flowmaster 40 series is a bit different from the Super 40. The Super 40 boasts Delta Flow Technology. The regular 40 series is supposed to be the most aggressive sound that Flowmaster offers. I've tried both. The Super 40, which was supposed to have less interior resonance than the regular 40 seemed to actually be a bit louder at idle. It sounded about the same at 1700-2200 rpm. This is the rpm range that you will know it's there, but it's not loud enough to scare the elderly off of the sidewalk.
Just my opinion....

To tell you the truth, I have heard from most people that it is best to keep the stock 3" Exhaust, and just replace the muffler and add a tip.. It is already a darn good flowing exhaust system, or so that's what I've heard. Me being the rebel that I am, cut off the exhaust and put on the flowmaster dual exhaust system which can be easily replicated by a good exhaust shop, which I believe is what you are going to attempt. I can tell you that when a friend of mine road in my truck with me, he said that the dual exhaust made a huge difference, I tend to believe him, but I thought it was just in my head, he proved me otherwise.. Dual exhausts look much better, and even out the look of the truck.. Sounds awesome especially since you are putting on a 40 series muffler, and you'll get a lot of compliments on it.. Good luck with your decision, I hope I helped some!
Our engines are basically just big air pumps and the 5.7 does breathe quite well from the factory; unless you have extensive internal breathing modifications I have found that on my Hemi using ONLY the SuperChips and a very conservative CAI as the modifications:
I get more than acceptable performance using the 3 inch in/out polished, stainless steel Magnaflow muffler (30 inch version 'quiet') running through 3 inch stainless steel pipe and eliminating the resonator; run straight out the back with a very large Magnaflow dual-outlet tip (SRT - 10 style) for looks only.
What YOU like is really the most important issue***
Again just my two cents worth / Good Luck !

In my opinion the only way you would see a whole lot of difference performance wise would be if you put a true dual exhaust on your truck. Personally I prefer a true dual or at least a dual out exhaust which is why I went with a single in dual out the sides and I love it. Perfomance wise with my borla set up I noticed some very noticable gains along with my friends and family too. I really dont think though that if you get a single in single out or a single in dual out Cat-Back setup that you'll notice a whole lot of difference. The way I looked at it is that the better the truck can breathe the higher the performance gains you'll be able to get.
Anyone tried the Gibson exhaust systems?
My friend had a single exit system on his 5.4 Ford and it sounded good, he said it "pepped" the truck up a little as well. It was a beauty to look at for sure, all polished, and sounded incredible, however other than the polished look it almost mirrored the factory set up, of course I realize the muffler design was different. I was just wondering if anyone had one on their Dodge?

I just put on Gibson dual exhaust and what a difference! Not only did I gain almost 2mpg, it's got more get up and go! I have about 13,800 on the truck at this point and I can tell somethings gotten better. Added bonus is that is rumbles like the old cars used to do.
I have them going out just behind the rear tire. I tow so I didn't want to clean the camper if soot should come out straight back pipes.
