You don't say, your name says diesel, are you a gasser or a cummins? On a gasser a vac leak under load like full lock steering while not moving could cause a stall.

Sorry I'm on the mobile version, it doesn't show signatures. Id look for a vacuum leak, maybe a disconnected hose. Does it idle at the correct rpm?

You could also have an air intake leak, or some idle control issues. The rpm should kick up a little when you turn the wheel and put some stress on the ps pump.

I've had this happen two times with mine as well:

Once in a snow storm, in 4WD reverse turned all the way to the right.

The second time in a rain storm sliding sideways with the wheel all the way right and the brakes locked up.

Keep in mind I have a stealthbox and all those damn lights on mine, so when it got surprised with the load of PS, Full ABS and every light I had on with sound system at full volume it stalled. Other than that, I've had no major problems with mine.
IMO, nothing to worry about. But let the pros give you the major advice

NO vacuum leaks, if I did, check engine would be on. no CEL, no idle issues, this literally has happened twice in a matter of 5 months

No CEL doesn't necessarily mean no vac leak. Pull the vac line off the break booster and let it run for a while, there won't be a CEL. I've pulled the booster vac line to seafoam the truck. CEL never came on and it was running for quite a while.
