4x4 Service needed for Front/Rear Diff & Transfer Case?

I had my truck in for an oil change at 22000 and the service guy told me that I was overdue for the diff oil to be changed. When I said I dont tow alot he said it didnt matter that simply living in the Northeast(NY) is considered severe duty...
When I mentioned that the maintenance guide states to check them at 18k he said there is no way to check them...
Needless to say I didnt let them change the fluid for 199.99 and will do it myself at 30k.

I'll check mine if I've been down in the low country fishin' or hog huntin' and know I've had water up to axle level. You pop the fill cover and dip your pinky in and look for any milky film in the fluid, which is a sign you got water in the diff. But as far as looking for anything else, you need to pull the cover, which means automatic fluid change...

So, based on the maintenance schedule 'directions', how would one go about 'inspecting' the axle fluid and transfer case fluid? There are no dipsticks and nothing to really see unless you drain the fluid. And at that point you may as well just replace it. What would the dealer do to inspect it? Would they stick something in the filler hole to get a sample of the fluid?
