2 ohm will let the amp produce more power. If you have dual voice coils, you have 2 ways to configure the connections. Series or parallel. If both coils are 3 ohm for example (like a lot of Audiobahns) then your ohm rating would be either 6 ohms, or 1.5 ohms. At which point, you would have to make sure your amp is 1 ohm stable.
I would not fear exceeding the speakers true RMS rating unless you have a CEA 2006 compliant amp, and it's receiving a true 14.4 volts. I have Infinity Kappa 6x9 in front and back. They are rated for 111 watss RMS. They get almost 140 RMS. The sound quality only improves. Power doesn't kill a speaker, distortion does. The cleaner the signal, the better the sound. A mono amp is perfect for driving dual voice coils. Know the speakers operable frequency range, and stay within it. If you sent half a watt of 22,000hz test tones to a 15 inch sub, all you would get is the smell of burning voice coils.lol. Speakers need power. Now go configure it.
Good luck.

How much do you want to spend on an amp? You have to spend a little bit more to get a 1 ohm stable amp, especially one that is 2 channels bridged and 1 ohm stable. With 2 dvc subs you can wire either at 4 ohms or 1 ohm. With 2 svc you can wire at 2 ohms or 8 ohms.
