ok, I want to use my 07 T&C to tow a pop-up camper. I'm getting the OEM tow hitch(the
real one that replaces the original bumper bar). And the OEM trailer harness. How concerned should I be with rear suspention? The camper weighs a total of about 2700 lbs. Not sure of the tongue weight.
Can I add the auto-leveling rear shocks, or is that a big deal? How about air bags for
the rear suspention?

You could certainly add air bags but the leveling shocks are a no go.
The frame and attaching points are reinforced on vehicles the came factory with the auto leveling shocks.
You will probably bend or break something if you add them
