Default Disappearing coolant

My 2003 3.3 has a mysterious coolant disappearing act going on. This started about a couple months ago. Never had any issues with cooling and was driving one morning and the temp gauge shot up to H and the dashboard warning light came on and dinged. I turned around to head to the auto parts store and all of a sudden the light went off and the temp gauge went down to normal operating mark. I kinda thought that was weird. Got to the auto parts store, checked the coolant level and it was way down. Bought two gallons and put one in the overflow bottle and the other in the radiator. I took of and did what I needed to do and had no issues. I’ve driven many places since and had no issues. Yesterday, I was driving to the grocery store and heard the ding and looked at the dashboard and it’s on H again. I’m thinking wth…. I slow down to get ready to turn onto a fuel station right up the street and the light goes off and the temp gauge returns to running temp. I went ahead and drove on the the grocery store and then back home and it didn’t happen again. I checked the coolant level later after I returned home and it was down. Today I filled the radiator up, started the engine and let it heat up to the point where the cooling fans came on 3 different times. I even gave it some gas and looked at everything that could drip and there is nothing. The oil is in great condition. The engine doesn’t seem to miss or skip a beat when I first start it. Could this leak be so slight that it’s not even really detectable yet? I’m scratching my head…
